Pesto aubergine (which is probably called eggplant? in the US)

 

 

 

Slice aubergine in 2 and score deeply. Drown in extra virgin olive oil, smother with pesto, slice tomatoes on top, sprinkle with cheese, bake in an oven on a low heat until it melts in your mouth (~30-40 minutes).
