iirc playing mafia I subsisted on what could be grabbed from the fridge or shelf between posts and eaten at the keyboard, but no one needs a recipe for liquor and chips, so I'll start with my favourite mafia related recipe, fried potatoes and eggs.

 

Heat a big skillet near smoking, lightly coat with olive oil, add a layer or two of thinly sliced potatoes. toss to coat, salt lightly, pepper generously.

 

cover loosely about ten minutes,then cook uncovered till browned nicely, stirring gently or flipping frequently.

 

correct the salt and pepper.

 

break in eggs. for a big pan of potatoes I'd do 5-7 eggs.

 

stir in till nearly set, take it off the heat, and serve it to your family as they discuss ether to drive all the way to jersey to bury the body or just dump it in the river.

fettuccine Alfredo

 

Cook the pasta. but call it macaroni no matter what it is.

 

in a sauté pan melt 2 sticks of butter, and stir in a pint of heavy cream.

 

when near a simmer, thicken slightly with 2 egg yolks. temper them first if you're a coward.

don't boil it now for gods sake.

 

immediately stir in a good cup of grated Romano and Parmesan, season with fresh cracked pepper and if you're in a fancy mood some fresh chopped parsley.

 

stir in the macaroni and heat together a moment or two.

 

eat it now, it turns to goop otherwise.

chicken cutlets

 

no point making less than 10 lbs of these

 

bash or butterfly chicken into reasonably thin cutlets.

 

soak in beaten egg, crushed garlic, hot sauce, and a little oil, a little water, and a little grated cheese. that always means Romano and Parmesan.

 

a few hours later, dredge in Italian bread crumbs with a little cornmeal, maybe spiced up a little.

 

just till browned on each side in olive oil.

 

if you have leftovers, heat them in a pan in butter and have a sammich.

either have an Italian gramma bake everything for you or find a good Italian bakery and keep your house stocked with every kind of cookie, pastry, and cannoli you can find.

 

you never know when the men will need to talk business, and they'll need a little something something.

 

keep the coffee coming, and have a few bottles of homemade red wine.

Mom's Fabulous Chili


(Also shared with the Wolfkin for their Chili Festival Cook-off, and the Gray Ajah recipe book)


 


1-1/2 lbs ground beef


1 minced onion


3 cloves minced garlic


 


** Brown these together in a large pot


 


Add in:


 


1-1/2 Tbsp chili powder


1 tsp cumin


1 tsp oregano


1 tsp salt


1 tsp sugar


1/2 tsp pepper


1/2 tsp cayenne pepper (or if you like spicy, I add quite a lot more - 2 tsp adds quite a kick)


2 beef bullion cubes dissolved in 1 cup hot water


1 can tomato sauce


2 cans of chili beans (mild if you're a wimp, hot if you   :wub: the spice)


 


Bring to a boil, then simmer covered on low for one hour.


 


** ALMOST FORGOT THE SECRET INGREDIENT:


 


Drop a small piece of chocolate - a Hershey's Kiss or a Dove miniature or the like - on top as it's simmering.  The chocolate gives it a hint of a mole' flavor with the spiciness.  Tres yum.


 


OR - if you are a crock pot person - I just dumped EVERYTHING in there (use very lean ground beef and chunk it up a bit at the beginning, and then again before you serve it, it'll be fine without pre-browning it) and simmer on low all dang day.


 


This is wonderful re-heated the next day... and the day after... We ate with Fritos and shredded cheese when I was a young'un.

8 Can Taco Soup recipe from Big Red Clifford!}

 

Ingredients:

1 (15 oz.) can black beans, drained and rinsed

1 (15 oz.) can pinto beans, drained and rinsed

1 (14.5 oz.) can petite diced tomatoes, drained

1 (15.25 oz.) can sweet corn, drained

1 (12.5 oz.) can white chicken breast, drained

1 (10.75 oz.) can cream of chicken soup

1 (10 oz.) can green enchilada sauce

1 (14 oz.) can chicken broth

1 packet taco seasoning

 

Directions:

Mix all ingredients together in a large pot.

Heat until warm, stirring occasionally.

Serve with tortilla chips.

Or ya know we women like to snack sometimes. I have red ands white wine and various liquors.

My famous Margarita:

 

7 ice cubes
 
2 shots cabo wabo tequila
2 shots Appleton hill rum
1 shot el president brandy
2 shots gran marnier
fill glass to within 1 inch w/ master of mixes margarita mix
fill final inch with cherry grenadine
 
shake and serve
 
7 ice cubes
 
alt:
 
4 cups tequila
1 cup triple sec (low proof)
1 cup grand marnier
half cup el presidente brandy
1-1.5 cup no pulp OJ
6 cups margarita mix/ 5 cups and 1 cup fresh key lime juice
 
Kamikaze shot
1/3 triple sec
1/3 vodka (good quality
1/3 sweet and sour
 
Dill cream sauce (goes great with potatoes and fish, especially bacon wrapped roast potato wedges)
7 tbsp mayo
3 oz sour cream
3/8 oz fresh baby dill
1tsp dried dill
1 tsp garlic (minced)
2 tsp salt
1tsp fresh ground black pepper
drizzle 1/2-1 tbsp red-win vinegar
blend well
 
Meat tenderizing:
Cake your meat in salt and let it sit in the fridge (15min for every 1/4 inch thickness)
 
Gobbler Pizza
Tortilla Shell
Bacon
Turkey breast 
lettuce
lemon
white cheddar
provelone
mayo
pesto
tomato
Olive oil
Butter
 
Take 4 tbsp mayo and 3 tbsp of pesto and mix them well.  Add in 1tsp of olive oil.  should achieve a faintly green color.  If not add 1/2 tbsp more pesto.  Fridge 15 min.  
 
Chop up a handful of lettuce into fine strands (or use spring mix) and squeeze a half lemon over.  Toss well.
 
Heat Oven to 425.  Take your pizza pan, put down a thin coat of olive oil on it.  Bake 2 strips of bacon for ~8 minutes until partially done (best to put them in while the oven is heating up).  shred and coat the tortilla with the cheese, leaving a lip about a half inch wide around the outside.  Melt 1 tbsp butter and brush the outer lip of the tortilla with it.  Chop up the partially cooked bacon and the turkey and spread it over the pizza.  Bake for 12 minutes or until the tortilla crust is crunchy and brown.  let pizza cool for ~5 minutes.
 
Add lemon infused lettuce on top.  Tomato slices if desired.  drizzle pesto mayo over top (may need to use an icing bag or bottle to do this, pesto mayo is thick).
 
 
Guacamole
Dice 1/2 of a roma tomato
cut 1 avocado into quarters
leave the open face of the avocado facing up and squeeze a heavy drizzle of lime juice over it
sprinkle sea salt over avocado face
simmer thin slices of red pepper/onion/garlic with a tbsp of butter until butter melts and flavors spread (2-3 min at very low heat, don't want to cook the vegetables or garlic fully)
unpeel and mash the avocado
add tomato
add cooked butter/garlic/pepper/onion mix
cilantro if desired (sparingly)
squirt a dash more lime juice
mix
salt to taste

I've got meatballs in red gravy on the stove and I've just finished making the sangria.

 

need even more alcohol for mafias.

 

 

slice many oranges, peel on, and a few lemons and limes.

 

that's the minimum for fruit, then add what you have and like. berries are great. this time I added peaches and pineapple, and tomorrow I'll put in the morello cherries.

 

then a bit of fruit juice - I had raspberry lemonade on hand so that's what I used. I like pomegranate there if it's around.

 

and now the liquor.

 

at minimum, a bottle of brandy or cognac and a bottle of triple sec and a couple big bottles of red (white if you like, but if it's not red it doesn't earn the bloody name). and boxed wine is fine, as are leftover partials.

 

I also added a bit if blackberry brandy, raspberry liquor, and Mr. Gill added a drop of honey brandy.

 

now it's in the fridge overnight, and tomorrow will either be served as is, or with some cherry seven up or seltzer and perhaps a spoon of raspberry sorbet.

 

we're getting the in laws drunk ayup.
