It's officially pumpkin-everything season!

What's your favorite pumpkin recipe?

 

Mine: Roasted Pumpkin Seeds!

I cheat and toast them in the microwave! Cover the pan with melted butter and shake whatever seasoning on top of the seeds! I've done garlic, cinnamon, nutmeg, and chocolate.

No one likes pumpkin? Hmmm...

 

How about apples?

 

You see, I make this lovely dessert called Apple Delight and it totally IS a delight!

 

Ingredients: 1 8 oz can of crushed pineapple

1 yellow cake mix

3 apples sliced thin (you can leave the peel on or not, up to you!)

Lemon juice

Sugar

1 stick of melted butter/margarine

Your favorite nuts (pecans and walnuts are amazing in this)

 

Pour half of the melted butter into a casserole dish and spread it along the bottom to "grease" the pan. Then drain the pineapple and cover the bottom of the pan with the fruit.

 

Once you slice your apples, pour on the lemon juice (keeps them from turning brown or getting mushy) and sugar and coat each slice. Put a single layer of apples on top of the pineapple.

 

Spread the yellow cake mix on top of the apples, pouring the rest of the butter over the to of the cake mix.

 

Chop the nuts as finely as you want (or leave them whole!) and spread that over the top.

 

Bake at 325 degrees for 25 minutes, take out and cut slices all the way to the pineapple, then put it back in the oven for another 15 minutes. This will get juices from the fruit up to the cake mix and make it yummy!!

 

You can serve it warm or cold. It's all awesome!

INGREDIENTS
  • 1¼ lbs sweet turkey Italian sausage, casing removed
  • 1 small onion, diced small
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 4 garlic cloves
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • ¼ tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp tomato paste
  • 1 can (14.5 oz) diced tomatoes (not drained)
  • 6 cups low sodium beef broth
  • 3 cups chopped kale
  • Cheesy Garlic Toast:
  • 1 small baguette, sliced into 12 slices
  • 2 Tbsp butter
  • 1 tsp garlic salt
  • ¼ cup shredded parmesan
