Southern Fried Chicken

 

You will need: chicken, flour, salt and pepper, buttermilk, oil, cast iron chicken fryer, wire rack in a pan or some paper towels (to let the excess oil drain off)

 

Cut up chicken or buy it already cut up, rinse it off, dry it with a paper towel or cheesecloth.

Season it with the salt and pepper.

Put an inch of oil in the iron fryer. Heat oil over medium heat until a pinch of flour fries in it. Never use high or medium high heat setting for frying chicken. The coating bits that fall off the chicken pieces will settle in the bottom of the pan and burn. Not good.

Dredge chicken in the flour, dip it in the buttermilk, then coat it with flour again. Put that piece in the hot oil. Do the other pieces the same way. Don't put too many pieces in at one time. The oil should be quite active around the chicken. If you aren't getting much action out of the oil when you put the chicken in, then the oil is not hot enough.

Let them fry until they look like they are a golden brown on the bottom, about ten minutes or so, and then turn them over using tongs or a long handled fork. Be careful cause you do not want to slosh hot oil on yourself or the stove eye/hob. Wait ten minutes and turn them again. Get the draining rack/pan ready. Take out the biggest piece and check it for doneness.  Unless the pieces are very large, they should be done inside and golden brown all around after cooking 20-30 minutes. Take them out, put them on the rack/towels and let the excess oil drip off them.

 

You can fry chicken in a shallow skillet, but it won't be as good or as safe. The high sides of the fryer keep the oil from sloshing out onto the stove top. Cast iron heats evenly and holds the heat better than other metals.

 

Of course, if you have an electric Fry Daddy, use that.  ;)
