Footwork! Horse stance! Center of gravity in your (lovely) hips! Never cross your feet, you'll end up on your tuckus.

 

And maintain your body on the ball of your feet, not the heels! And shuffle! Your leading foot moves and the other follows. This is a half step. Only move like a normal gait in a pass if and only if you have a good reason to close distance. Distance is commitment!

Wouldn't my dominant hand then hold the blade?

No, it would not mean your hand grips the blade, though there are scenarios for such things. You grip beneath the quillons so that your thumb can press upright against the flat of the blade in the ricasso. This is anatomical in nature - your erect thumb creates a ninety degree angle in your wrist against the blade. This gives you a stronger grip.

 

By shuffling, you approach cautiously. If you were to advance in a passing step, you would be advancing uncautiously, or perhaps boldly.

An honor, certainly. :)

 

My favorite stance is the Fool. From there, you can bind their blade, step, and give two progressive smacks to either side of the head.

 

Or the base of their skull if you're feeling ambitious.

Steak does have a pretty powerful scent that might work perfectly... Let's go with that...
