That video isn't the guy actually beating it in 11 minutes. It's a TAS. A TAS is a Tool-Assisted Speedrun. The game is played on an emulator and uses things like slowdown (frame-by-frame perfection) and savestates (so you don't mess up) to get a perfect game.

 

The Mario 64 run, however, just abuses a glitch in the game that allows you to get to the last Bowser battle with only 16 stars instead of the normally required 70.

 

God, I know too much about this crap.

 

Also, both of those videos are quite old.
