I'm reminded of Lord of Chaos, When Rand visits the school. I held on to that. How far could the Technology tree in the world go before it would ruin the story. I can see maybe the age of gunpowder(front loading muskets and cannons). But once you get to like WWI, WWII era technology. The series wouldn't be able to sustain itself.

Since our own time is one of the Ages, in theory we have to lose all access to the Power or at least forget about it, and technology has to reset for our own ancient civilizations.

 

Similarly, technology resets after Mosk and Merk duel with fire, etc. Namely, our Age is going to end with or just before the Tamyrlin figures out how to Channel and then builds the quasi-utopian society that was/is/will be the Age of Legends.

 

I think any technology is possible as long as we can survive a catastrophe and start over again.

As the series is nearly finished, not very. There isn't time for them to develop WWI or II era weapons, for example. However, the AoL was considerably more advanced than the series present (or even our present) so in terms of how far technology can advance in the world, in other series in the same setting or off screen, the sky's the limit.
