George RR Martin's A Song of Ice and Fire (7 books, 4 out now): starts with A Game of Thrones.

 

Tad Williams' Memory, Sorrow & Thorn (3 books, complete): starts with The Dragonbone Chair.

 

Raymond E. Feist and Janny Wurts' The Empire Trilogy (3 books, complete): starts with Daughter of the Empire (you may want to read Feist's Magician first though).

 

Greg Keyes' Kingdoms of Thorn and Bone (4 books, complete): starts with The Briar King.

 

Joe Abercrombie's First Law (3 books, complete): starts with The Blade Itself.

 

Scott Lynch's Gentleman Bastard (7 books, 2 out now): starts with The Lies of Locke Lamora.

 

Kate Elliott's Crown of Stars (7 books, complete): starts with King's Dragon.

 

Patrick Rothfuss' Kingkiller Chronicle (3 books, 1 out now): starts with The Name of the Wind.

 

JV Jones' Book of Words (3 books, complete, although with a 6-book sequel series, The Sword of Shadows, 3 books of which are out now): starts with The Baker's Boy.

 

Steven Erikson's Malazan Book of the Fallen (10 books, 8 out now): starts with Gardens of the Moon.

 

R. Scott Bakker's Prince of Nothing (3 books, complete, but with a sequel trilogy starting soon): starts with The Darkness That Comes Before.

 

Neil Gaiman's Neverwhere or American Gods (stand-alones)

 

Guy Gavriel Kay's Tigana, The Lions of Al-Rassan or A Song for Arbonne (stand-alones).

Although I haven't read it in fifteen years, "The Death Gate Cycle" by wies and hickman were always some of my favorites.  Its seven books long, and has an entire world, called the Labyrinth, a living prison designed to contain a war loving race of runic magic users, who have all their spells tatooed on their bodies!

 

For some light reading, the Golden compass series got pretty good if you can get through the uber childish tone of the first book. After that, it starts getting into some strange biblical philosophy, and actuall gets pretty intense.
