Moules frites

 

This is pretty much the national dish in Belgium, and I love it so much that I eat it every time I'm there, even though I'm slightly allergic to mussles :D

 

1.5 kilo blue mussles

2 TBsp butter

1 carrot

1 parsnip

1 onion

2 dl dry white wine

2 dl fish clear soup

2 dl cream

1 dl parsley

salt

pepper

 

chop the carrot, parsnip, onion and parsley.

melt the butter in a pan

fry the vegetables until they start to get soft

throw in the mussles with shell (keep the sheels closed), fry for a while

add wine, cream and clear soup,

boil until the mussles opens up

add parsley

add salt and pepper

 

Serve with fries. Preferably Belgian fries, but french will do as well. If you haven't been to Belgium you won't know the difference anyway;)

 

As it is a Belgian dish, best thing to drink is beer, especially a nice trappiste :D
