Not yet, have to make my way back to the plains from Oerba village.

Plus I think some of the stuff they used I don't actually have

... are you doing this before beating the game? Because that's not really advisable; you're wasting any CP you get past getting the primary roles maxed out through stage 9 otherwise. Also you shouldn't have much trouble getting back from Oerba unless you didn't do any of the Cieth stone missions that allow teleportation.

I have one that teleports me to oerba village proper.

And I have taken down the Adamachiled or whatever it's name is, but couldn't take down the Adamantoise.

I have adavanced a fair amout of the Crstarium so far

If you can't teleport away from Oerba, that means you missed most of the early missions. Have you had the boss fight in Oerba yet? If you're that far along, you might be better off just proceeding with the game; there'll be a teleporter near the beginning of chapter thirteen that can take you back to the crash site, which is right by the Archylte Steppe.

yeah I probably should but I really want to get some rare drop Scarletites, so I can do some weapon upgrading and the lesser tortoises aren't so tough now so I can take them down.

Nearly beat the boss the first time but I took a while so it cast doom on me and then got dazed within killing it thus dooming me to loss

Yeah, if you haven't been able to take down Barthandelus yet, you really don't have any business screwing around with adamantoises. Anyway you really don't ever need to upgrade your weapons to get through the game. In fact upgrading your weapons makes it harder to get a five-star rating on battles. I'm in the post game, the only achievements remaing are Master's Seal and Treasure Hunter (Vercingetorix isn't too bad as long as you keep healed, keep him poisoned, and have all three characters able to switch to Sentinels), and I'm only just now starting to work on equipment upgrading.

Yeah I sort of just took the game how I wanted to play it, though stupidly I sold some of the catalysts you get early in the game when I didn't realise what they were for

That's pretty much my first playthrough in a nutshell. I did dumb stuff like starting into the secondary roles as soon as I got them, which was a complete waste of CP and left me way behind when I finally unlocked stage 10 in the crystarium. The game is a lot less abrasive the second time through when you know what to expect.

Anyway at the point you're at, you might consider heading back to the Archylte Steppe to do missions 1-14, and maybe mission 55 (that's the infamous Neochu battle that nets you the Growth Egg, which is the only reason to try doing it so early - do not even think about it if Vanille doesn't have Death yet). But don't even worry about Adamantoises right now; at your level, the only way to kill one is to have Vanille as your party leader, immediately summon Hecatoncheir to knock the bastard down, and then spam Death until it connects. But if I were you, I'd wait until I had that Growth Egg before trying to farm them.

Anyway if any advice I give is good for anything here, it should be this: do not under any circumstance waste your CP on secondary roles until you get all your primaries to role level five. You'll get garbage for stat boosts until the very last stage, and they cost way more than nodes on the primary roles did.

Yep that's what I have done, I did secondaries after that so it is the only ones I can upgrade and nearly complete some of them already.

I like to take my time and beat up monsters even if the behemoth kings take ages to kill

... how can you have your primary roles to level five if you haven't cleared chapter 11 yet? The last stage of the crystarium doesn't unlock until after you beat the game.

 

Anyway if your goal is just to farm scarletites, there's a much better enemy for that coming up in chapters 12 and 13 called Sacrifice - it's a way easier kill than Adamanchelid, basically all they do is stumble around and occasionally put some crappy statuses on you. They also drop perfumes, which are on the list of items that have no purpose other than to sell at a high premium.
