I prefer to start with the heart, if there is one. Everyone says it is the Pièce de résistance, but I disagree.

It all lies in the brain. I find that in most people, it is quite unused. Although, not perfectly preserved, it is quite a delicacy.

First you get the spleen. Dont rinse it. Weigh it, add the same weight in ground up Bhut Jolokia-dont mess about, do it before the blood on the spleen crusts-then put the thing between two breads. Job done. If you have a tongue left, it was a good sandwich.

i think i'd rather brine it and smoke it... but i am unfamiliar with Bhut Jolokia.
