Gaidal Cain

It is possible that this has been answered earlier.

I was thinking that maybe Mat has Gaidal Cain in his head.

Mat gets his head stuffed in ch24-26 of TSR.

Against this is the fact that Gaidal Cain is present in Tel'aran'rhiod in ch52 of TSR when Biregitte meets Nynaeve.

Although they claim that time travels differently in Tel'aran'rhiod.

This is an interesting thought, since Gaidal and Birgitte were both in the Tower of Ghenji some of Gaidal's memories could have been amongst the slew that were crammed in Mat's head on his trip through the doorway in Rhuidean. The fact that he was in T'a'R later really doesn't matter in this case. It's memories, not personality, and it would only be one of Gaidal's lives that we know of, but there's probably something there.

Now, the question that would determine if this is at all possible is 'Would the Eelfinn gotten to take his memories, experiences, emotions, etc. (the savor!) if he never made it to the chamber of bonds before he died?' The old story Thom recalls ended up with them never reaching their destination. Without B & G coming in through the doorways to make the 'Finns play nice they might have taken whatever the hell they wanted to, so I'm guessing they might have.

As we have seen, the Finns does not take memories from people. They "record" (for lack of a better word) what people experience after they have left their realm. And since Cains only known visit ended with him dying, no such recordings could have happened.

that's correct but maybe they could have recorded his memories while he was in the Finn-world. According to Birgitte, they have spent some 20+ days there. However, it seems very unlikely that Mat got Gaidal's memories. Almost nobody who goes through the ToG comes back alive (one in a thousand according to Birgitte). That means that the Finns killed a LOT of people who went that way. But Mat doesn't seem to have any memories of being killed in ToG. That suggests that either the Finns only collect the memories of those who come through the ter'angreal doorways and leave their world alive or that they decided not to put any such memories in Mat's head. Either option would rule Gaidal's memories out.
