But can you guys give me a list of your favorite fantasy novels/series.

Those are the ones that spring off the top of my head. You will notice that neither Lord of the Rings nor Wheel of Time are on it. I never liked LotR, and I have an on/off relationship with WoT. It is currently in the "off" situation.
