Torrie finishes wiping down the tables and stands up with a sigh. She looks around the Pub and nods with approval. There is a dancing floor, a bar, tables with small candles in the center, and a place for a band. Everything is ready. The doors are about to be thrown open and the nightlife at the Kin will soon be in full swing.

 

I need a drink to start this party off.

 

 

She walks around the bar and starts to make an Irish Coffee.

 

Irish Coffee:

1 teaspoon sugar,hot strong black coffee,1 jigger Irish whiskey,1 tablespoon double cream.Pour cream over a teaspoon held over coffee so that it floats on the coffee.

 

 

She sits down to await the crowd.

No. I am not home. I am in a hotel in North Carolina with my dad, and since I didn't bring the headphones...

*whispers* I don't want to wake the old man up. ;)

But, I will listen to it later. The parts I did catch were funny. :D

Next to Ft. Bragg. My brother came home Monday morning. :)

He is actually next to me right now.

They are both asleep. I don't know what humor they have when they are trying to sleep. :(

But I know my dad will probably laugh when he is awake. :D

Ed, I thought you would like it. The local radio station plays it around here all the time. It's one of those songs that will stay in my head all day.

 

 

 

 

Ok, another week, another recipe!

 

Scalloped Irish Potatoes

 

Ingredients:

 

6 potatoes,peeled and thinly

sliced.

6 tablespoons butter or margarine

1 1/2 chopped onion

2 cups milk

1/2 cup shredded cheddar cheese

 

Directions:

 

Place all items in a large, greased

casserole dish,stir until all items

are mixed in together, cover with

foil, bake

at 350 degrees for 1 hour,remove

foil,

bake for 15 minutes more.

Serves 12 people.

**Stumbles in bleary eyed and maybe a little hung over**

 

Here is another recipe! This one is a little more work than the last one, but it should pay off big!

 

St. Brigids Oaten Bread

1 cup flour, 1 tablespoon sugar, 3/4 teaspoons baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon salt., 3 tablespoons butter in small pieces, 3/4 cup uncooked oatmeal flakes. 1 egg, 1/2 cup buttermilk

1.heat oven to 425 degrees. 2. grease baking sheet. 3.combine flour, sugar, baking powder, baking soda and salt in bowl and mix. 4.Add butter bits and cut in with knife until mixture is crumbly. 5.add oats and toss to combine. 6.in other bowl beat egg with buttermilk. 7.make a well in the dry ingredients. Pour in the egg mixture and mix with a fork until crumbs hold together. Make dough into ball and transfer to floured surface. Knead 20-25 times. Add flour if sticky.

8.pat dough into 8-inch round and transfer to baking sheet. 9.score a deep cross into the bread but do not cut it through 10.bake 15-20 minutes till brown.

Irish Spiced Beef

Ingredients:20 cloves, 2 tsp ground allspice or cinnamon, 6 Shallots, 2 tsp Prague Powder(can be obtained from the Sausage Maker-26 military Rd,BNuffalo,N.Y. 14207), 1Pound Kosher Salt (coarse), 1 tsp black pepper, three tsp. ground mace, 7-8 lb. beef. 2-3 bay leaves, ground nutmeg, Two Pints Guinness Stout. Instructions:1. Grind all dry ingredients and mix 2. Add finely chopped shallots 3. Rinse beef and place in plastic or glass container(avoid iron). 4.Take 1 seventh of the spice/salt mixture and rub it all over the meat. Place meat back into container, cover and set out on the back porch or in a cool spot-if too warm out place in fridge. Each day for seven days rub the meat with one seventh of the mixture, turn over and re-cover. Leave the liquid that forms with the meat. At the end of seven days place meat and liquid into a big pot -add water to top up and cover the meat and boil until the meat is tender.(a fork should just barely be able to lift up strands of meat-dont over do it!) Change water adding clean water and boil for another 30 minutes. Then add veg-large carrots,onions, and potatoes- cook until almost done. Add two pints Guinness Stout and boil for another 10-20 minutes.

You can eat this hot or leave to cool overnight-place meat into colander with weight on it and plate or dish under it.

Okay 2 things....

 

1.  I was born at Fort Bragg!  So was my best friend's sister!  haha

 

2.  For the beef recipe...any idea what type of beef?  It sounds like something you would use a beef roast for but I'm not positive.  Has anyone ever had it?  I'm going to try it out but significantly reduce the recipe...it will take the hubs and I weeks to get through 7 pounds of meat!  haha :)

 

Oh!  And I made the potatoes....all I can say is superduperyummo!  but...I didn't take pictures because I am a total dope!  We loved them though so I'll be making them again.  I'll be sure to get pics next time :)

All the recipes I found seem to be for a large number of people. I reduced them all.

 

I think it is beef, but I am guessing you can do lamb also.

 

Don't worry, I made the potatoes and forgot to take pictures, too. lol
